Thanksgiving Eats the Healthier way…cont’d

Dressing (stuffing): I prefer dressing not in the bird stuffing but this recipe can be done for either preparation. Now this side dish although low in calorie is huge in flavor. The bread I’ve used most often with this recipe is Sarah Lee Lite 45 calories per serving and a number of flavor selections to choose from.


  1.     1 cup chopped celery
  2.     1 cup chopped Onion
  3.     2 cloves of chopped garlic
  4.     12 slices of low calorie whole wheat bread lightly toasted to remove excess moisture. (this serves four 1/2 c each, for 6 or more or if like me you love left over dressing you can use the whole loaf)
  5.    1 cup of low-sodium chicken broth (separated into 1/3 cup and 3/4 cup)
  6.    1 tsp Ground sage or poultry seasoning
  7.    1/8 tsp Morton Lite salt
  8.    Ground pepper
  9.    Non stick cooking spray 

Cook onion, celery, and garlic in medium saucepan with 1/3 cup broth until tender crisp. Remove from heat.  Add salt, pepper and sage/or poultry seasoning.

Pour dried bread cubes into a medium or large mixing bowl and add the vegi mixture. Drizzle and mix in the remaining broth until moistened.

Spray casserole dish with non-stick and pour stuffing into it. Place stuffing into a preheated 350 degree oven for 20-25 minutes.

This dish is a great make ahead item and the crunchy top with inside soft goodness is amazing. Also if you’d like add in items such as apple, low-sodium turkey sausage, bell pepper etcetera keeping in mind this will increase calories when adding fruit or sausage.
