Sweet Potato or Yams or both…

This awesome vegetable is extremely versatile and is a great substitute for the everyday Russet, it is however a starchy veg so you do have to use moderately. The benefits  from this one root vegetable are rewarding.

Lets eat…… Ingredients

  1. 3 large fresh yams or sweet potatoes baked [scrub skin, poke with fork and put into preheated 400 oven for one hour]
  2. 1/4 cup Dry oatmeal
  3. 1/4 cup make yourself brown sugar substitute (recipe to follow)
  4. 1/4 cup flour
  5. 1/2 cup Country Crock Lite + 1/2 cup
  6. 1 tsp each of cinnamon & nutmeg

Peel your potatoes and breakup into a medium mixing bowl. Add 1/2 cup Country Crock lite and mash add in your cinnamon & nutmeg and whip until smooth. Pour mixture into medium casserole set aside or put into fridge great make ahead. Next take your dry ingredients oatmeal, brown sugar and flour stirring together then mix into the 1/2 cup of Country Crock and combine into a loose crumble add to top of whipped mash and bake for 30 minutes at 350.

Make your own Brown Sugar: I recommend using a Stevia based sweetener such as TruVia.    You’ll need 1 cup of sweetener and 1 1/2 tablespoons of molasses (easily found in the baking isle of the grocery) and mix together until incorporated. Tadaaaa brown sugar.
